- White Beans - 1 piece
- Water - 16 fl oz
- Sugar - 7.1 oz
- Coarse Salt - a pinch
- Liquid dark chocolate - 12 oz
- Whole egg - 3 pieces
- Brandy - 1 fl oz
Step by Step guide
Step 1
Extract the seeds from the vanilla bean and place them along with the pod in a saucepan. Add water, salt, and sugar. Heat over medium heat, stirring until the sugar dissolves.
Step 2
Then add the broken chocolate and stir until the mixture is smooth.
Step 3
In a small bowl, whisk the yolks and gently incorporate them into the chocolate mixture. Return to the saucepan and heat on low for 3 minutes until the mixture thickens (but do not let it boil). Cool for 2 hours and add the brandy.
Step 4
Transfer the mixture to an ice cream maker or a container and freeze for about 8 hours, stirring every hour.
