Chocolate Flake Mousse
Ingredients
- Bittersweet Chocolate - 7.1 oz
- 10% cream - 12 fl oz
- Farm fresh eggs - 6 pieces
- Sugar - 3.5 oz
- Water - 1 fl oz
- Amaretto Liqueur - 1 teaspoon
Step by Step guide
Step 1
Separate the yolks and crack the eggs into a bowl.
Step 2
Whisk the yolks and eggs.
Step 3
Place the chocolate in a double boiler.
Step 4
Prepare a syrup from sugar and water over medium heat.
Step 5
While continuing to whisk the eggs, pour the syrup in a thin stream down the side of the bowl.
Step 6
Whip the cream.
Step 7
Add the amaretto to the egg mixture.
Step 8
Fold in the whipped cream.
Step 9
Pour in the chocolate, stirring constantly.
Step 10
Divide into molds and refrigerate for 5 hours.
