Description
The fondant can be stored tightly sealed in the refrigerator, and before the next use, slightly warmed in the microwave. The roses can also be stored in the refrigerator in a sealed container.
Ingredients
- Liquid dark chocolate - 3.5 oz
- Marshmallow - 3.2 oz
- 10% cream - 1 fl oz
- Butter - 1 tablespoon
- Cognac - 2 tablespoons
- Powdered Sugar - 4.2 oz
Step by Step guide
Step 1
In a saucepan, place the broken chocolate pieces and set over low heat. Melt completely.
Step 2
Without removing the saucepan from the heat, add the marshmallows to the melted chocolate and continuously stir the mixture with a spoon.
Step 3
When about half of the marshmallows have melted, pour in the cream, add the butter and cognac. Stir continuously until you achieve a uniform thick liquid mixture. Remove from heat.
Step 4
While constantly stirring with a spoon, gradually add the sifted powdered sugar. When the mixture becomes too thick and elastic to stir with a spoon, switch to using your hands. Continue adding powdered sugar until the mixture feels like warm, firm, elastic dough. It should not stick to your hands; rather, your hands should remain clean but greasy.
Step 5
Roll the mixture into a ball and transfer it to parchment paper. The fondant is ready. It should be slightly warm, very soft, and tender. Cover with another sheet of paper on top and roll out to the desired thickness. Remove the top sheet of paper.
Step 6
From the rolled-out fondant, use a glass to cut out circles. Flatten each circle against the table with your palm.
Step 7
Layer these circles slightly overlapping each other (about halfway) in a row. You will need 3-4 circles for one rose.
Step 8
From a piece of fondant, shape a small sausage — the core for the rose. Place it on the very first petal. Now simply roll everything into a little roll, starting from the side where the core is, pressing the lower half with your fingers. Hold the bud in your hands, gently unfold the petals, and shape them as desired. Place it in the refrigerator for 5-10 minutes to set.
