Chocolate Ginger Cake

Ingredients

  • Wheat Flour - 1½ cups
  • Cocoa Powder - 4 tablespoons
  • Sugar - ¾ cup
  • Farm fresh eggs - 2 pieces
  • Cream 22% - 5 fl oz
  • Butter - 5.3 oz
  • Baking Powder - 1 teaspoon
  • Chopped almonds - 8.8 oz
  • Kumquat - 7.1 oz
  • Grated Ginger Root - 1.8 oz
  • 70% Dark Chocolate - 3.5 oz
  • Grated Ginger Root - 1 tablespoon
  • Cardamom - a pinch

Step by Step guide

Step 1

Sift the flour, cocoa powder, ground ginger, and baking powder.

Step 2

Cut the fresh ginger and kumquats into thin strips, dust with flour. Add a pinch of ground cardamom. Mix everything thoroughly.

Step 3

Melt the butter. Grind the almonds and sugar in a food processor.

Step 4

In the food processor, combine the cream, eggs, and melted butter.

Step 5

Pour the cream and egg mixture into the flour with spices, and mix with a silicone spatula until it becomes a homogeneous mass. Let it rest for 20 minutes.

Step 6

After 20 minutes, add the almond crumble with sugar, chopped kumquats, and ginger to the batter. Mix thoroughly.

Step 7

Chop the dark chocolate with a knife and add it to the batter. Mix thoroughly.

Step 8

Line a cake pan with parchment paper and pour the batter into the pan.

Step 9

Preheat the oven to 356°F (350 degrees Fahrenheit) and bake the cake for 45 minutes. After 45 minutes, remove the cake, cover it with foil, and return it to the oven for another 20 minutes.

Step 10

Let the finished cake cool and rest for 20-30 minutes, remove from the pan, slice into pieces, place on a plate, and dust with powdered sugar.
