Description
You can use both small store-bought marshmallows and homemade ones for this ice cream if you feel inspired to make your own. I used marshmallow cream or Marshmallow Fluff, which can also be bought or made at home. If you do use traditional marshmallow cubes, it would be great to lightly torch them with a gas burner before adding them to the ice cream and let them cool. But this is purely optional and not necessary. To remove the ice cream, hold the cups under a stream of hot water for a bit. 70% dark chocolate is optimal for this recipe.

- Milk - 16 fl oz
- 10% cream - 8 fl oz
- Sugar - 7.1 oz
- Agave Syrup - 1 fl oz
- Corn Starch - 0.7 oz
- Salt - 0 oz
- Semi-soft cream cheese - 1.1 oz
- Cocoa Powder - 2.1 oz
- Freshly brewed green tea - 4 fl oz
- Liquid dark chocolate - 5.3 oz
- Marshmallow - 16 fl oz
Step by Step guide
Step 1
For the ice cream, combine the cream, 2/3 of the milk, half of the sugar, salt, and agave syrup in a saucepan over medium heat. In a separate container, dissolve the cornstarch in the remaining milk and let it 'rest', then add the cornstarch mixture to the milk-cream mixture in the saucepan and cook, stirring constantly over the same medium heat until thickened to the consistency of milk pudding. Do not let it boil. Remove from heat, stir in the cream cheese, and let it cool.
Step 2
For the chocolate sauce, combine strong freshly brewed coffee, sifted cocoa powder, and the remaining half of the sugar in a small saucepan and cook over medium heat for 1–2 minutes until smooth. Remove from heat, chop 25 grams of chocolate into it, let it melt completely, then stir the sauce until smooth.
Step 3
Pour the hot sauce into the ice cream, mix until smooth, cover, and chill in the refrigerator overnight.
Step 4
Now you can 'assemble' the ice cream bars. For this, take plastic disposable cups (or, as in my case, reusable plastic cups from store-bought sorbet) and layer the ice cream, melted dark chocolate, and marshmallows in them. Insert a stick into each cup and place the ice cream bars in the freezer until set.
