Chocolate ice cream with toasted marshmallows

Ingredients

  • 3.2% Milk - 7 fl oz
  • 10% cream - 7 fl oz
  • Sugar - 4.1 oz
  • Salt - a pinch
  • Corn Starch - 3 teaspoons
  • Semi-soft cream cheese - 1.8 oz
  • Water - 2 fl oz
  • Cocoa Powder - 0.7 oz
  • Marshmallow - 1.8 oz
  • Bittersweet Chocolate - 1.1 oz

Step by Step guide

Step 1

For the toasted marshmallows, you will need a kitchen torch, gas stove, or a candle with matches. If using a torch, simply turn it on and toast the marshmallows over the flame, as you would when making lemon meringue pie. If using a stove or candle, skewer the mini marshmallows on a toothpick and lightly toast each one by holding it over the flame for a few seconds, rotating it from different sides. Do not let the marshmallows burn too much, or they will taste unpleasantly bitter. A light brown hue is what you want.

Step 2

For the chocolate sauce, combine water, cocoa powder, and 45 grams of sugar in a small saucepan, mix, and place over medium heat. Cook for 1-2 minutes until smooth. Add the chocolate and cook until fully melted. Remove from heat and let cool.

Step 3

Dissolve the cornstarch in 50 ml of milk and set aside.

Step 4

For the ice cream, in another small saucepan, combine the cream, remaining milk, 70 grams of sugar, and salt. Place over medium heat and bring to almost a boil. Pour in the cornstarch milk and cook, stirring constantly, until thickened. Remove from heat, add the cream cheese and chocolate sauce, and mix until glossy and smooth. Let cool to room temperature, then refrigerate overnight.

Step 5

Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions, adding the toasted marshmallows in the last couple of minutes of freezing. Transfer to a container and place in the freezer for at least 4 hours before serving.

Step 6

If you do not have an ice cream maker, immediately pour the mixture into a container, place it in the freezer, and stir the ice cream every 20-30 minutes until fully frozen. Sprinkle with marshmallows just before serving.
