Chocolate Kulich
Ingredients
- Milk - 2 fl oz
- Honey - 0.2 oz
- Wheat Flour - 14.5 oz
- Butter - 4.2 oz
- Chocolate eggs - 2 pieces
- Sugar - 1.8 oz
- Salt - 0 oz
- Vanillin - 0.6 oz
- Raisins - 2.5 oz
- Liquid dark chocolate - 17.6 oz
- 33% Cream - 12 fl oz
- Gelatin - 10 pieces
Step by Step guide
Step 1
Prepare the sponge. Mix warm milk (80 ml), honey, and flour (60 g) to create the sponge. Cover and let it rest until it rises, about 30-40 minutes.
Step 2
Prepare the dough for the kulich. Mix flour (380 g), butter, crack the eggs, add sugar, salt, vanillin, raisins, and the sponge. Let it rise for 40-45 minutes. Divide into molds and let it rest for 20-25 minutes. Bake at 338°F for 40-50 minutes.
Step 3
Soak the gelatin in cold water, melt the chocolate in a bowl over a water bath, bring the cream to a boil, and cool to 140°F. Squeeze the gelatin and dissolve it in the cream, then combine with the melted chocolate using a whisk, and cool for 2 hours in the refrigerator. Whip the ganache with a mixer until smooth.
Step 4
Cut out a nest shape from the baked kulich, and using a pastry bag with a nozzle, decorate the kulich with fine strokes of ganache in a pattern resembling 'twigs', trying to make it look like a bird's nest, and let it set.
