Ingredients
- Light Molasses - 3 tablespoons
- Milk - 5 fl oz
- Vegetable Oil - 6 fl oz
- Farm fresh eggs - 3 pieces
- Wheat Flour - 10.6 oz
- Cocoa Powder - 2.6 oz
- Baking Powder - 2 teaspoons
- Sugar - 7.9 oz
- Chestnut puree - 4 tablespoons
- Cream - 7 fl oz
- Fresh Berries - 3.5 oz
- Raspberry leaves - 3.5 oz
- Strawberry - 3.5 oz
- Red Currant - 3.5 oz
- Liquid dark chocolate - 7.1 oz
Step by Step guide
Step 1
Preheat the oven to 320°F. Line a shallow baking tray with parchment paper.
Step 2
Combine the molasses, oil, milk, cocoa, and eggs and whisk together.
Step 3
In a separate bowl, mix the flour, baking powder, and 100 grams of sugar. Combine with the milk mixture.
Step 4
Pour the batter into the prepared tray and place it in the oven. Bake for 15 minutes, then remove from the oven and let cool.
Step 5
Mix the chestnut puree with the cream and whip until combined.
Step 6
Cut the cooled chocolate cake into three equal parts. Spread cream on the bottom layer, sprinkle with berries, add a bit more cream on top, and cover with the second layer. Repeat.
Step 7
To make the glaze, combine sugar, chocolate, and water and melt, but do not boil.
Step 8
Cool for 4 minutes to allow the mixture to thicken slightly. Pour the glaze over the log and refrigerate for 1 hour.
