Step 1
Place the marshmallows on half of the cookies and put them in the microwave for 30 seconds. The marshmallows will puff up and become soft. Cover with the remaining cookies, pressing the marshmallows like a sandwich. Leave the cookies for 30 minutes to allow the filling to set.
Step 2
Melt the chocolate in a double boiler and coat the cookies in it. Optionally, you can sprinkle the cookies with shredded coconut or almond flakes.
