Chocolate meringues with orange chocolate and pistachio crumble
Ingredients
- Cocoa Powder - 0.4 oz
- Powdered Sugar - 4.1 oz
- Meyer Lemon Juice - ½ teaspoon
- Egg white - 4 pieces
- Sugar - 4 oz
- Butter - 1.4 oz
- 70% Dark Chocolate - 3 oz
- Orange zest - 1 teaspoon
- Unsalted peanuts, shelled - 2.1 oz
Step by Step guide
Step 1
In a small bowl, mix the powdered sugar and cocoa powder.
Step 2
In a mixing bowl, beat the egg whites until foamy, add the lemon juice, and beat at medium speed, gradually adding 1 tablespoon of sugar.
Step 3
When soft peaks form, increase the mixer speed to maximum and add another tablespoon of sugar. Once the previous two tablespoons of sugar are incorporated, add the remaining sugar and continue beating until stiff peaks form.
Step 4
Sift the cocoa and powdered sugar mixture into the egg whites and gently fold in with a spatula, turning the bowl counterclockwise.
Step 5
Transfer the mixture into a piping bag and pipe small circles onto a baking sheet lined with parchment paper.
Step 6
Let them dry for 1 hour. Check the surface after an hour. The mixture should not stick to your finger.
Step 7
Meanwhile, preheat the oven to 194°F.
Step 8
Bake the meringues for 1 hour. Allow to cool on the baking sheet and carefully remove from the parchment.
Step 9
While the meringues are cooling, prepare the chocolate-orange sauce. Break the chocolate into pieces, mix with cubes of butter, and melt over a water bath.

Remove from the heat and add the orange zest, mixing well. Allow to cool to room temperature.
Step 11
Coat the meringues with chocolate and sprinkle with crushed pistachios.
