- Almond - 6.2 oz
- Butter - 1.8 oz
- Farm fresh eggs - 3 pieces
- Wheat Flour - 1.1 oz
- Bittersweet Chocolate - 3.2 oz
- Baking Powder - 0.1 oz
- Marinated cherries - 5.3 oz
- Ground dried cherries - ½ jar
- Whipped Cream - 13 fl oz
Step by Step guide
Step 1
Chop the cherries into small pieces. Reserve the cocktail cherries for decoration.
Step 2
Beat the almond paste with 1 egg using a mixer. Once the mixture is smooth, add the remaining eggs and continue to beat for about 5 minutes until the mixture lightens in color.
Step 3
Meanwhile, melt the butter and chocolate in a double boiler.
Step 4
When the egg mixture is fluffy, pour in the melted butter and chocolate. Mix on low speed until well combined.
Step 5
Sift the flour and baking powder into the egg-chocolate mixture. Mix until it forms a dough, then fold in the cherry pieces and refrigerate for 2 hours.
Step 6
Spoon the dough into mini baking molds and bake in a preheated oven at 347°F for about 12 minutes.
Step 7
Before serving, cool to room temperature, then top each cupcake with a small amount of whipped cream and garnish with a cocktail cherry.
