Chocolate Mousse Cake

Ingredients

  • Wheat Flour - 6.7 oz
  • Sugar - 8.8 oz
  • Cocoa Powder - 0.7 oz
  • Salt - a pinch
  • Freshly brewed green tea - 8 fl oz
  • Vanilla extract - 1 fl oz
  • Vegetable Oil - 2 fl oz
  • Farm fresh eggs - 9 pieces
  • Butter - 4.1 oz
  • 70% Dark Chocolate - 15.9 oz
  • 33% Cream - 14 fl oz
  • Chopped almonds - 2.1 oz
  • Dark Chocolate Glaze Dr.Oetker - 3.9 oz

Step by Step guide

Step 1

Preheat the oven to 347°F. Grease a 22 cm diameter cake pan with butter and dust with flour.

Step 2

In a large bowl, mix 190 grams of flour, 1 cup of sugar, 20 grams of cocoa, and 1/4 teaspoon of salt. Make a well in the center and add the hot brewed coffee, 80 ml of vegetable oil, 1 tablespoon of vanilla, and 1 egg. Whisk until the batter is smooth and homogeneous.

Step 3

Pour the batter into the pan and bake for 30–45 minutes, or until a toothpick inserted into the cake comes out clean. Once the cake is completely cool, remove it from the pan and cut it into 2 layers. Return the bottom layer to the pan and set the top layer aside.

Step 4

For the mousse, melt 450 grams of chocolate and 115 grams of butter in a double boiler, add 1/4 teaspoon of salt and 2 teaspoons of vanilla, and gently whisk in 8 egg yolks.

Step 5

In a separate bowl, whip 8 egg whites, gradually adding 50 grams of sugar, and continue whipping until stiff peaks form.

Step 6

Whip 355 ml of heavy cream in another bowl and fold it into the chocolate mixture. Pour the mousse into the pan and refrigerate for 2 hours. Then, when the mousse has set slightly, place the reserved top layer on top and return the cake to the refrigerator. The cake should chill for at least one night.

Step 7

For the chocolate glaze, melt 110 grams of confectionery glaze and 1/4 cup of cream in a double boiler, stirring until the glaze is smooth and homogeneous.

Step 8

Remove the cake from the refrigerator and from the pan, place it on a serving plate, and decorate with the glaze. You can use almond flakes for decoration. Press them against the sides of the cake with your hands.
