Ingredients
- White Chocolate - 3.5 oz
- Liquid dark chocolate - 4.9 oz
- Sugar - 2 tablespoons
- Farm fresh eggs - 3 pieces
- Mild Chili Spice - ½ teaspoon
- Pistachios - 3 oz
- Cognac - 2 tablespoons
- Whipped Cream - 8 fl oz
- Jam - to taste
Step by Step guide
Step 1
Break the white chocolate (saving some for decoration) and dark chocolate (70-80% cocoa content) into small pieces and melt them in a water bath. Once the chocolate is liquid, stir thoroughly, remove from heat, and let it cool slightly.
Step 2
Meanwhile, in one bowl, beat the egg yolks with sugar vigorously, and in another bowl, beat the egg whites.
Step 3
Gradually add the melted chocolate to the beaten egg yolks using a metal spoon.
Step 4
When the yolk and chocolate mixture is homogeneous, add the ground pistachios and chili, then add the cognac and mix.
Step 5
Once the mixture is uniform, combine it with the whipped cream and stir until you achieve a consistent texture.
Step 6
Fold in the beaten egg whites and mix again.
Step 7
Spoon the mousse into a large bowl or 8 small cups, cover with plastic wrap, and refrigerate for at least 3 hours.
Step 8
Before serving, sprinkle the mousse with the remaining grated white chocolate. Decorate the center of each cup with any berry jam.
