Description

Ingredients
- Chocolate 53% - 9.5 oz
- Olive Oil - 5 fl oz
- Sugar - 1 cup
- Egg white - 7 pieces
- Brandy - 1 fl oz
- Lemon - 1 piece
Step by Step guide
Step 1
Melt the chocolate in a water bath. Remove from heat and gently pour in the extra virgin olive oil, whisking constantly.
Step 2
Add the brandy and mix.
Step 3
Separate the egg whites from the yolks.
Step 4
Beat the yolks with half of the sugar until a thick white foam forms. Add to the chocolate mixture and mix again.
Step 5
In a separate bowl, beat the egg whites with the remaining sugar on low speed until a thick fluffy foam forms. Add the egg whites and grated lemon zest to the chocolate mixture and mix.
Step 6
Pour the chocolate mixture into glasses and refrigerate until fully set.
