Ingredients
- Butter - 6 oz
- Bittersweet Chocolate - 6 oz
- Freshly brewed green tea - 2 fl oz
- Farm fresh eggs - 4 pieces
- Sugar - 1 tablespoon
- Dark rum - 1 fl oz
- Water - 1 tablespoon
- Salt - a pinch
- Vanilla extract - ½ teaspoon
Step by Step guide
Step 1
Melt the chocolate and butter in a double boiler, adding the coffee. Stir until smooth. Remove from heat.
Step 2
Fill a large bowl with ice water and set aside.
Step 3
In a bowl over a double boiler, whisk the egg yolks with 170 grams of sugar, rum, and water for 3 minutes until the mixture thickens (like mayonnaise).
Step 4
Remove from heat and place the bowl with the yolks in the bowl with ice water and continue whisking until cool. Then fold the chocolate mixture into the yolks.
Step 5
In a separate bowl, whisk the egg whites with salt until stiff peaks form. Continue whisking and add 1 tablespoon of sugar, whisking until stiff peaks form.
Step 6
Add vanilla.
Step 7
Then gently fold 1/3 of the egg whites into the chocolate mixture, mixing until fully combined, then add the remaining egg whites and fold in, being careful not to deflate the whites.
Step 8
Spoon the mousse into a mold and place it in the refrigerator, tilting it at a 45-degree angle, for 2 hours.
Step 9
Prepare homemade whipped cream (for 1 cup of heavy cream, use 1–1.5 tablespoons of powdered sugar).
Step 10
After 2 hours, spoon the whipped cream into the mold, garnishing with cocoa or chocolate, and refrigerate for a couple more hours.
