Description

The most American pastry is the chocolate muffin. The closest conceptual relative to the muffin is cornbread, which early settlers made because it was easier to eat in a compact form. Then someone had the idea to replace the cornmeal with wheat flour and add cocoa and chocolate to the batter — and so chocolate muffins became, if not a legend, then a symbol of American baking. They are best enjoyed warm, while the chocolate is still melty.
