Chocolate Orange Cake
Ingredients
- Wheat Flour - 7.1 oz
- Butter - 3 oz
- Hazelnut - 3 oz
- Sugar - 5 tablespoons
- Liquid dark chocolate - 6.2 oz
- 10% cream - 4 fl oz
- Orange bitters - 3 tablespoons
- Chocolate eggs - 4 pieces
- Oranges - 3 pieces
Step by Step guide
Step 1
Place the flour, butter, and nuts in a food processor and blend for 15 minutes. Add 2 tablespoons of sugar and 3 tablespoons of cold water, and chop everything until a smooth dough forms. Lightly knead if necessary and shape into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
Step 2
Place a bowl over a pot of hot (but not boiling!) water and heat, stirring constantly, the chocolate and cream until melted. Set aside for 10 minutes and then whisk in 4 egg yolks (one at a time), followed by the orange liqueur. Allow to cool.
Step 3
Preheat the oven to 392°F. Roll out the dough and line a low springform pan that is 5 cm high and about 20 cm in diameter. Prick the bottom with a fork. Cover the bottom and sides with greased foil. Bake for 8 minutes, then remove the foil and bake for another 12 minutes until a crispy crust forms. Allow to cool slightly.
Step 4
Reduce the oven temperature to 356°F. Spread the bottom with orange cream. Whip 3 egg whites to a firm but not dry foam. Gradually add 3 tablespoons of sugar while continuously whipping. Then fold the whipped egg whites into the cooled chocolate mixture.
Step 5
Pour the filling into the pan. Bake for 25–30 minutes until the dough is golden. The cake should rise on top, which may cause slight cracking.
Step 6
Lower the heat slightly and leave in the oven for 20 minutes with the door slightly ajar. Dust with powdered sugar and serve the cake slightly warm with orange wedges.
