Ingredients

  • Wheat Flour - 6.7 oz
  • Cocoa Powder - 2 tablespoons
  • Baking Powder - 2 teaspoons
  • Salt - a pinch
  • Activated Baking Soda - ½ teaspoon
  • Kefir - 5 fl oz
  • Sugar - 3.5 oz
  • Orange juice concentrate - 3 fl oz
  • Vanilla extract - ½ teaspoon
  • Orange zest - 1 tablespoon
  • Liquid dark chocolate - 6 oz
  • Butter - 0.7 oz
  • 10% cream - 2.8 oz
  • Orange Syrup - ¼ cup
  • Fresh Mint - 0.1 bunch

Step by Step guide

Step 1

Preheat the oven to 356°F. Prepare 12 small muffin molds.

Step 2

Sift the flour with cocoa powder, baking powder, and baking soda into a bowl. Add salt. In another bowl, mix the kefir with sugar, then add melted and cooled butter, vanilla extract, orange zest, and juice.

Step 3

Combine both mixtures, adding 2 tablespoons of chopped chocolate. Distribute the mixture into the prepared molds, sprinkle with another 2 tablespoons of chocolate on top, and bake in the oven for 25 minutes. Check readiness with a toothpick.

Step 4

For the ganache, place the remaining chocolate pieces in a bowl. Heat the cream and pour it over the chocolate. Wait a few seconds, then stir until the chocolate is melted. Add the chopped butter. Cover with plastic wrap, pressing it against the surface of the ganache. Cool before use.

Step 5

Transfer the ganache to a pastry bag with a piping tip. Pipe onto the surface of the cooled muffins, creating a pattern. Decorate with orange jam and mint leaves.
