Chocolate-Orange Truffles
Ingredients
- Butter - 2.1 oz
- Cream (40%) - 3 tablespoons
- Liquid dark chocolate - 8.5 oz
- Orange bitters - 2 tablespoons
- Orange zest - 1 teaspoon
- Vegetable Oil - 1 tablespoon
Step by Step guide
Step 1
In a saucepan over medium heat, bring the cream and butter to a boil.
Step 2
Remove from heat and add 120 grams of chopped chocolate. Stir until smooth. Then add the orange liqueur and zest. Mix well and refrigerate until thickened, about 2 hours.
Step 3
Line a baking sheet with parchment paper. Roll the chocolate mixture into balls the size of walnuts and place them on the baking sheet. Refrigerate for 30 minutes.
Step 4
Meanwhile, melt the chocolate with the vegetable oil in a double boiler until smooth. Remove from heat and let cool slightly.
Step 5
Dip each truffle in the chocolate and return to the baking sheet. Allow to set.
