You can use any liqueur of your choice instead of rum.
Ingredients
- Wheat Flour - 4.4 oz
- Milk - 8 fl oz
- Butter - 1.8 oz
- Farm fresh eggs - 2 pieces
- Rum - 1 tablespoon
- Chocolate - 2.1 oz
- Sugar - 6 tablespoons
- Salt - a pinch
- Powdered Sugar - to taste
Step by Step guide
Step 1
Sift the flour into a bowl. Add sugar and salt. Make a well in the center and add 1 egg and 1 yolk. Beat with a mixer, then gradually pour in the milk. Mix until smooth. Strain through a sieve to remove lumps.
Step 2
Melt half of the butter, add the rum. Mix well and let it sit for 1 hour.
Step 3
Melt the butter in a pan. Use a ladle to pour the batter in portions and let it spread evenly across the surface of the pan. Fry on each side until golden brown. Sprinkle the hot pancake with grated chocolate and fold it in quarters. You should get 8 pancakes. Dust with powdered sugar and serve with a sauce made of butter and rum or with a filling of cottage cheese with raisins.
