Chocolate Peanut Butter Sandwich Cookies
Ingredients
- Wheat Flour - ¾ cup
- Sugar - ½ cup
- Butter - 2.5 oz
- Cocoa Powder - 0.7 cup
- Farm fresh eggs - 2 pieces
- Activated Baking Soda - ¾ teaspoon
- Milk - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Peanut Butter - 1 cup
- Liquid dark chocolate - 1 piece
- Vegetable Oil - 1 teaspoon
- Nuts - to taste
Step by Step guide
Step 1
Combine all the cookie ingredients in a large bowl and mix with a mixer until smooth. Place the dough in the refrigerator for 2 hours until it can be shaped into balls.
Step 2
Preheat the oven to 356°F (350 degrees Fahrenheit). Shape the dough into balls about 2 cm in diameter. Place them on a dry baking sheet with plenty of space between them. Bake for 10 minutes. Remove from the oven, let cool slightly, transfer to a wire rack, and allow to cool completely.
Step 3
Melt the chocolate and shortening in the microwave for one minute, stirring to ensure all lumps are melted. Use a spoon to coat half of the cookies with chocolate, then sprinkle with nuts. Place on parchment paper and let the chocolate set. Be careful not to use too much fat, or the chocolate won't set and will stick to your hands.
Step 4
Once the chocolate has cooled, spread peanut butter on one half of the cookie, cover with the second half (chocolate side out), and press the halves together.
