Chocolate Raisin Cake

Ingredients

  • Butter - 7.1 oz
  • Sugar - 1½ cups
  • Cocoa Powder - 4 tablespoons
  • Milk - 4 fl oz
  • Wheat Flour - 2 cups
  • Farm fresh eggs - 4 pieces
  • Baking Powder - 1 teaspoon
  • Vanilla salt - to taste
  • Raisins - to taste
  • Chopped almonds - to taste

Step by Step guide

Step 1

In a saucepan, pour in the milk, add sugar and cocoa powder, stir well, and place on low heat.

Step 2

When the sugar dissolves, add the softened butter to the saucepan and bring the mixture to a boil while stirring occasionally. Do not let it boil.

Step 3

Remove the mixture from heat and let it cool (you can reserve 3–4 tablespoons of the mixture for glazing). Mix the flour with the baking powder and sift it. Beat the eggs with a fork. Add the eggs and sifted flour to the cooled mixture and mix well.

Step 4

Incorporate the vanilla sugar, rinsed and dried raisins, and nuts into the batter. Pour the batter into a greased loaf pan and bake at 180–392°F until ready, about 1 hour.

Step 5

Let the finished cake cool in the pan, transfer it to a plate, and optionally drizzle with glaze or dust with powdered sugar.
