Description
The muffins should have a light, almost crispy crust, and a tender dough inside.
Ingredients
- Egg white - 2 pieces
- Dry yeast - 0.4 oz
- Wheat Flour - 7.1 oz
- Milk - 5 fl oz
- Cocoa Powder - 3 tablespoons
- Butter - 4.4 oz
- Sugar - 3.9 oz
- Light Raisins, Seedless - 4.2 oz
Step by Step guide
Step 1
Add sugar to the melted butter. Mix well.
Step 2
Lightly beat the eggs with a whisk.
Step 3
Add the eggs to the butter and sugar mixture. Mix until smooth.
Step 4
Rinse the raisins and let them soak in water.
Step 5
Combine the sifted flour and cocoa powder.
Step 6
Mix the flour with the butter and add the yeast to the mixture.
Step 7
Pour in the milk (at room temperature) and mix until homogeneous.
Step 8
Let the mixture sit until the yeast is fully dissolved, then stir again.
Step 9
Preheat the oven to 338°F.
Step 10
Lightly grease your silicone molds with vegetable oil after they have been in the oven for half a minute.
Step 11
Fill the molds almost to the top (the batter will rise a little). I have enough for 12 small silicone muffin molds filled almost to the edge.
Step 12
Bake for 25 minutes.
Step 13
Let cool for about 10 minutes to easily remove from the molds.
