Description

- Yubileynoye Cookies - 14.1 oz
- Butter - 7.1 oz
- Cocoa Powder - 3.5 oz
- Sugar - 2.8 oz
- Walnuts - 2.8 oz
- Pistachios - 0.7 oz
- Vanillin - a pinch
- Orange zest - 1 piece
Step by Step guide
Step 1
Crush all the cookies in a blender or meat grinder, or smash them in a plastic bag. Some prefer to crush the cookies not into flour, but to leave pieces up to 7 mm in size. No larger pieces are needed.
Step 2
Grind the walnuts to a flour-like consistency, leaving some pieces around 7–8 mm.
Step 3
In a bowl, mix the cookies, cocoa, sugar, vanillin, and nuts.
Step 4
Add very soft and melted butter. Knead well.
Step 5
Add the fresh zest of a large orange to the mixture.
Step 6
The mixture should hold together well and have a slight shine, indicating it is not dry. If the mixture is too dry, you can add sweetened condensed milk or regular milk. Start by adding 2 tablespoons and mix. Watch the consistency.
Step 7
Prepare 4 pieces of plastic wrap, 30–40 cm long. Spoon the mixture onto the plastic wrap to form a 'log'. Fold the sides to prevent the mixture from falling out and carefully roll it up along the long side as if rolling a sushi roll. Place in the freezer for 4 hours. It is convenient to make logs about 15 cm long. This recipe yields 4 logs. This size is easy to handle and store in the freezer. If you do not plan to eat them all at once, it is convenient to take them out in portions so that the entire log does not thaw.
