Chocolate Soufflé with White Chocolate Cream
Ingredients
- Water - 3 tablespoons
- Instant coffee - 1 tablespoon
- Liquid dark chocolate - 4.9 oz
- Brandy - 1 tablespoon
- Whole egg - 3 pieces
- Egg white - 4 pieces
- Sugar - 2½ tablespoons
- White Chocolate - 2.1 oz
- Whipped Cream - ½ cup
- Powdered Sugar - to taste
Step by Step guide
Step 1
Grease 4 small soufflé dishes with butter and lightly sprinkle with sugar.
Step 2
In a small saucepan, combine the instant coffee and water. Add the chopped dark chocolate and brandy. Place over low heat and stir until the mixture is smooth. Remove from heat and stir in the egg yolks. Let cool to room temperature.
Step 3
Whip the egg whites to stiff peaks. Gradually add the sugar. Then fold in the chocolate mixture gently and divide it among the prepared dishes. Place on a baking sheet.
Step 4
Preheat the oven to 392°F (400 degrees Fahrenheit). Bake the soufflés for 15 minutes.
Step 5
Meanwhile, melt the white chocolate in a double boiler. Remove from heat and let cool to room temperature. Whip the cream in a small bowl. Then fold in half of the chocolate, mix well, and then fold in the remaining chocolate.
Step 6
Dust the hot soufflés with powdered sugar and serve immediately with the chocolate cream.
