  • Milk - 4 fl oz
  • 33% Cream - 5 fl oz
  • Liquid dark chocolate - 4.4 oz
  • Egg white - 4 pieces
  • Brown Sugar - 0.9 oz
  • Vanilla Ice Cream - 4 tablespoons
  • Raspberry leaves - 6.3 oz

Step by Step guide

Step 1

In a saucepan, bring the milk and 65 ml of cream to a boil. Remove from heat and add the chopped chocolate. Stir until the mixture is smooth. Let it cool.

Step 2

Meanwhile, in a bowl, whisk the yolks with the sugar until light and airy. Add the remaining cream and whisk again until well combined.

Step 3

Combine the chocolate with the egg mixture and mix well until smooth. Pour into small bowls and serve with a scoop of ice cream and garnish with raspberries.
