Chocolate Truffles with Lemon and Thyme
Ingredients
- Heavy cream - 1¼ cups
- 70% Dark Chocolate - 9.2 oz
- Thyme - 1½ teaspoons
- Meyer Lemon Juice - 1½ tablespoons
- Citrus Zest Mix - 1 teaspoon
- Cocoa Powder - to taste
Step by Step guide
Step 1
Pour the cream into a saucepan and bring to a boil, then add the finely chopped thyme. Remove from heat and let cool for 20 minutes. Then add the lemon juice and grated lemon zest. Mix well.
Step 2
Meanwhile, melt 200 grams of chocolate in a double boiler. Remove from heat and add another 60 grams. Mix well and add the cream. Place in the refrigerator for about 3 hours until set.
Step 3
Line a large plate with parchment paper. Take 2 teaspoons of the chocolate mixture and form into balls. Roll in cocoa powder, pressing lightly. Place on the prepared plate. Refrigerate for 1 hour.
