Ingredients

  • Olive Oil - 2 fl oz
  • Sugar - 1.8 oz
  • Farm fresh eggs - 2 pieces
  • Wheat Flour - 7.4 oz
  • Salt - to taste
  • Baking Powder - 1 teaspoon
  • Cinnamon - to taste
  • Walnuts - to taste

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Beat the olive oil and sugar with a mixer, add the eggs, and beat again.

Step 3

Next, add the baking powder, cinnamon, and salt (mix well), then add the flour.

Step 4

At this stage, you will likely need to switch from the mixer to using a spoon, as the dough will be thick, but not so thick that you can't work with it by hand.

Step 5

Add roughly chopped walnuts and diced candied orange peel and mix to evenly distribute the filling throughout the dough.

Step 6

Line a baking sheet with parchment paper. Since the dough is sticky, it's best to wet your hands before working with it.

Step 7

Take about half of the dough, transfer it to the baking sheet, and shape it into a log.

Step 8

Wet your hands again and repeat the process with the second half of the dough. Place the baking sheet in the preheated oven for about 25 minutes, until the dough is baked through and a golden crust forms.

Step 9

Remove the baking sheet and let the biscotti cool slightly (5-10 minutes, so they can be handled).

Step 10

After that, carefully cut the log into slices, turn each slice on its side, and return to the oven for another 10 minutes.

Step 11

The most patient can take a third step: remove the biscotti, turn them onto the other side, and bake for another 10 minutes.
