Description
You can change the quantity and type of dried fruits, as well as the type of nuts to your liking! I also had dates and figs. I didn't add ginger because I don't like it. It turned out very delicious!
Ingredients
- Wheat Flour - 10.6 oz
- Butter - 8.8 oz
- Brown Sugar - 7.1 oz
- Farm fresh eggs - 4 pieces
- Raisins - 6.7 oz
- Prunes - 5.6 oz
- Ground dried cherries - 4.6 oz
- Dried cranberries with sugar - 4.6 oz
- Dried Apricots - 5.6 oz
- Orange zest - 1 tablespoon
- Dried Apricots - 4.6 oz
- Walnuts - 5.3 oz
- Cinnamon - 2 teaspoons
- Nutmeg - a pinch
- Grated Ginger Root - to taste
- Brandy - 7 fl oz
- Ground clove - a pinch
- Baking Powder - 2 teaspoons
- Honey - 0.1 oz
- Powdered Sugar - 1.8 oz
- Chopped almonds - 3.5 oz
Step by Step guide
Step 1
Wash the dried apricots and prunes and cut them into small pieces, mix with cranberries, cherries, and raisins, pour in 150 ml of brandy, add spices, 2 tablespoons of honey, cover with plastic wrap, and let steep overnight.
Step 2
Cream the room temperature butter with sugar and eggs, add the zest, sift in the flour and baking powder.
Step 3
Mix the dried fruits with the butter along with the brandy (there will be very little left) and the nuts. The batter will be very thick!
Step 4
Transfer the batter to a loaf pan (grease the pan with butter and dust with flour if necessary), sprinkle with almond flakes (optional).
Step 5
Bake at 338°F for one hour. If the cake is not done in this time, cover it with foil and leave it in the oven at 150–320°F for another 30 minutes.
Step 6
Remove the finished cake from the pan, brush with a mixture of the remaining honey and brandy, and let it cool completely.
Step 7
Before serving, dust with powdered sugar.
