Ingredients
- Egg white - 3 pieces
- Vanilla extract - 2 teaspoons
- Powdered Sugar - 8.8 oz
- Cinnamon - 1 teaspoon
- Chopped almonds - 14.1 oz
- Almond - ½ teaspoon
- Water - 2 teaspoons
Step by Step guide
Step 1
Preheat the oven to 284°F. Line a baking sheet with parchment paper.
Step 2
Whip the egg whites until thick foam forms. Set aside 1 tablespoon of foam for brushing the cookies. Gently fold in the powdered sugar and mix.
Step 3
Add the vanilla extract, ground cinnamon, almond extract, and half of the ground almonds. The dough should be thick. Add more almonds as needed to achieve the desired consistency.
Step 4
Dust the work surface with powdered sugar and roll out the dough to a thickness of 5 mm. Use cookie cutters to cut out cookies and transfer them to the baking sheet.
Step 5
Mix the egg white foam with cold water and brush the cookies. Bake for 25 to 30 minutes.
Step 6
Once the cookies have cooled, dust them with powdered sugar.
