Ingredients

  • Raw cane sugar - 6.3 oz
  • Egg white - 6 pieces
  • Whipped Cream - 1 qt
  • Pudding - 7.1 oz
  • Ground dried cherries - 1 can
  • Chopped almonds - 6 tablespoons

Step by Step guide

Step 1

Line a cake mold with 2 layers of plastic wrap, leaving the edges hanging over.

Step 2

Pour sugar into a pan with a small amount of water. Stirring constantly, melt the sugar over medium heat and cook until it reaches a caramel state. To check if the syrup is ready, drop a bit of syrup into a glass of cold water. If the drop forms a ball, the caramel is ready.

Step 3

Beat the yolks well until they double in volume. Gradually pour in the caramel while constantly whisking until the mixture cools down.

Step 4

Mix half of the cream with the broken pudding pieces, and the other half with the egg mixture.

Step 5

Combine everything together and add the cherries and almond flakes.

Step 6

Transfer the mixture to the prepared mold and cover with the edges of the plastic wrap.

Step 7

Place in the freezer overnight. Before serving, remove the plastic wrap and cut into pieces. Allow to soften slightly.
