Description
The main bread of the North Caucasus is flatbreads known as churek. In our recipe, we make churek with kefir and corn flour, although they can sometimes be made with wheat flour. It's best to fry the flatbreads in butter, and at the end of cooking, cover the skillet with a lid to allow the bread to rise.
Ingredients
- Corn Flour for Polenta - 2 lbs
- Chicken Egg - 1 piece
- Baking Powder - 0.4 oz
- 1% Kefir - 10 fl oz
- Water - 5 fl oz
- Salt - to taste
- Sugar - to taste
- Butter - 1.8 oz
Step by Step guide
Step 1
Mix all the ingredients except for the oil.
Step 2
In a cast iron skillet, heat the oil and fry the flatbread on one side for about 5-7 minutes, then flip it and fry for another 5 minutes.
Step 3
Flip it onto the first side, cover with a lid, and cook until done. The bread should rise and be airy.
