Ciabatta with Preferment
Ingredients
- Wheat Flour - 14.1 oz
- Water - 7 fl oz
- Vegetable Oil - 1 tablespoon
- Sugar - 1 teaspoon
- Dry yeast - 1 teaspoon
- Salt - 1 teaspoon
Step by Step guide
Step 1
For the preferment, dissolve the yeast in a small amount of warm water and let it activate.
Step 2
Add 100 g of flour, mix, and place the preferment in a warm place for 30–40 minutes. The preferment will increase in volume by about 2 times.
Step 3
Add the remaining flour, water, salt, and sugar to the preferment.
Step 4
Mix the dough and add 1 tablespoon of sunflower oil.
Step 5
Knead the dough well again and let it rest for another 30 minutes in a warm place.
Step 6
Generously sprinkle the table with flour. Divide the dough into 2 parts. Shape the dough into 2 loaves. Transfer them to a baking sheet generously dusted with flour, cover with a towel, and let the dough rest for another 30 minutes.
Step 7
Preheat the oven to 392°F. Bake the ciabatta for about 30–35 minutes.
