Cinnamon Apple Rolls

Ingredients

  • Dry yeast - 0.2 oz
  • Water - ½ cup
  • Sugar - 3.5 oz
  • Milk - 1 fl oz
  • Salted Butter - 4.8 oz
  • Chicken Egg - 1 piece
  • Salt - 1⅒ teaspoons
  • Wheat Flour - 2 cups
  • Granny Smith apples - 2 pieces
  • Brown Sugar - ½ cup
  • Cinnamon - 1 teaspoon
  • Semi-soft cream cheese - 1.2 oz
  • Powdered Sugar - 3.5 oz
  • Vanilla extract - 0 fl oz

Step by Step guide

Step 1

In a glass, mix the yeast, a teaspoon of sugar, and half a cup of warm water. Let it sit for 10 minutes. In a large mixing bowl, add hot milk, 35g of softened butter, the egg (at room temperature), 45g of sugar, and a teaspoon of salt. Mix on medium speed.

Step 2

Add half of the flour and stir. Pour in the yeast mixture and gently mix. Slowly add the remaining flour and mix on medium speed for 5 minutes. Transfer the dough to a greased bowl, cover, and let it rise in a warm place for 2 hours.

Step 3

For the filling: Peel and dice the apples. Melt 40g of butter and 50g of sugar in a saucepan. Add the apples and cook until they caramelize (about 15 minutes).

Step 4

When the dough has risen, remove it from the bowl, roll it out into a rectangle, and brush with 20g of melted butter. Mix the brown sugar with cinnamon and sprinkle it over the dough. Place the apples on top of the sugar. Roll it up and cut into pieces about 5 cm wide.

Step 5

Place on greased parchment paper and let rise for another 2 hours. After that, bake in the oven for 20-22 minutes at 190°C.

Step 6

For the glaze: Mix the cream cheese, 40g of butter, powdered sugar, vanilla extract, and a pinch of salt. Whip until creamy.

Step 7

Cover the finished rolls with the glaze.
