Cinnamon Buns are a delightful pastry made with a soft and fluffy dough, generously filled with a mixture of cinnamon and sugar, then rolled up and baked to golden perfection. These sweet treats are perfect for breakfast or as a snack, often enjoyed with a cup of coffee or tea. They can be topped with a creamy glaze for an extra touch of sweetness.

Ingredients

  • Wheat Flour - 33.5 oz
  • Chicken Egg - 2 pieces
  • Milk - 17 fl oz
  • Dry yeast - 1.8 oz
  • Sugar - 5.3 oz
  • Salt - 1 tablespoon
  • Cardamom - 2 spoons
  • Butter - 6.2 oz
  • Ground Cinnamon - 2 spoons
  • Almond - 1.8 oz

Step by Step guide

Step 1

Melt 150 g of butter in a pot, add milk, and heat to 99°F. In a portion of this mixture, dissolve the yeast with a pinch of sugar, wait a couple of minutes for it to activate, and then mix it with the remaining liquid.

Step 2

Sift the flour and mix it with 100 g of sugar, salt, and cardamom. Add the egg. Gradually pour in the milk and yeast mixture, kneading the dough until it is smooth and shiny. Place the dough in a large bowl, cover it, and set it in a warm place for one hour, until it doubles in size.

Step 3

Knead the risen dough on a surface dusted with 100 grams of flour for 7 minutes.

Step 4

Divide the dough into two parts, roll out each part, spread a thin layer of softened butter, and sprinkle with 25 g of sugar and cinnamon. Roll the dough into a log and cut it into buns about 3 cm thick. You should end up with a total of 50 buns.

Step 5

Place the buns on baking trays lined with parchment paper, and cover them with sheets on top as well. Allow them to rise for about 30 minutes.

Step 6

Remove the paper from the risen rolls. Lightly beat an egg, brush it over the rolls, and sprinkle with sugar and chopped almonds. Place in an oven preheated to 482°F for 5-10 minutes. Then allow them to cool on a wire rack, covering with a towel.
