Cinnamon Cookies
Ingredients
- All-purpose flour - 2 cups
- Baking Powder - 1 tablespoon
- Salt - 1 teaspoon
- Vegetable fat - ¼ cup
- Milk - 0.8 cups
- Clarified Butter - 1 teaspoon
- Sugar - ½ cup
- Cinnamon - 1 teaspoon
- Chopped Pecans - 1 tablespoon
- Powdered Sugar - 4.2 oz
- Vanilla - ¼ teaspoon
Step by Step guide
Step 1
Combine the flour, baking powder, and salt; mix in the vegetable fat.
Step 2
Add the milk and 1 tablespoon of vanilla; mix with a fork until the dough pulls away from the sides of the bowl.
Step 3
Roll out the dough on a lightly floured surface into a rectangle about 0.6 cm thick.
Step 4
Spread softened butter on top (I prefer using soft butter rather than melted).
Step 5
Combine the cinnamon and sugar; evenly sprinkle over the dough.
Step 6
Optionally, sprinkle with chopped pecans (or other nuts or raisins).
Step 7
Roll up starting from the long side into circles about 1.2 cm thick.
Step 8
Place the circles, slightly pinching the edges, into a greased 22 cm baking dish.
Step 9
Bake at 220°C for 18-20 minutes or until golden brown.
Step 10
Remove from the oven and drizzle with icing, serve warm.
Step 11
For the icing: combine all ingredients and whisk until smooth.
