Description
These legendary cinnamon rolls feature dough of an otherworldly tenderness, a creamy glaze that melts in your mouth, and a generous helping of cinnamon. A million calories and pure bliss. Don’t say that a cinnamon roll is too sweet and is synonymous with culinary indulgence. For the sake of instant childhood joy, one can compromise their principles, at least once a month. In practice, 99% of those who ostentatiously refuse dessert actually indulge in pastries and rolls regularly; they just don’t advertise it.
Ingredients
- Milk - 7 fl oz
- Dry yeast - 0.4 oz
- Wheat Flour - 22.9 oz
- Chicken Egg - 2 pieces
- Butter - 7.1 oz
- Raw cane sugar - 7.1 oz
- Vanilla salt - 0.4 oz
- Sugar - 3.5 oz
- Powdered Sugar - 3.5 oz
- Cinnamon - 0.7 oz
- Salt - 1 tablespoon
- Semi-soft cream cheese - 3.5 oz
Step by Step guide
Step 1
Dissolve the yeast in warm milk (add a pinch of sugar from the initial 100 grams). While the yeast is rising, whisk the eggs in a separate bowl.
Step 2
Add the softened butter (1/3 of the stick) to the eggs.
Step 3
Add the sugar (remaining from the initial 100 grams) to the egg and butter mixture.
Step 4
Combine the yeast dissolved in milk with the mixture of egg, butter, and sugar, and mix thoroughly in the bowl where the dough will be kneaded.
Step 5
Combine the flour (600–700 grams, or as much as the dough needs) with the salt.
Step 6
Add a portion of the mixture (flour and salt) to the yeast dough and knead it. Prepare the gluten (mix a teaspoon of flour with a teaspoon of water, shape it into a ball, and rinse it with cold water). Place the resulting ball into the dough and mix well.
Step 7
After adding the gluten, incorporate the remaining mixture of flour and salt, and knead the dough. Cover the resulting ball with a towel and place it in a warm spot for one hour.
Step 8
At this time, prepare the filling. Soften the butter in the microwave for about 7-10 seconds. Combine the cinnamon and brown sugar.
Step 9
Start the "assembly" process. Roll out the dough, which should have doubled in size, into a thin large sheet, preferably rectangular (about 40 cm by 55 cm).
Step 10
Spread melted butter over the dough sheet. Sprinkle the sheet with a mixture of cinnamon and cane sugar. Roll the sheet tightly into a log (the tighter, the better).
Step 11
Cut the roll into round pieces. You can use a knife or string (string works better). Place the resulting buns in a baking dish lined with parchment paper and greased with butter. Put them in the oven for 20–30 minutes at 347°F (until they turn golden brown; then bake them a bit more on top to dissolve the sugar).
Step 12
Once the rolls are golden brown and ready, remove them from the oven and immediately coat them with the creamy mixture (you can brush it on or pour it over). Finally, you can garnish with grated chocolate or nuts if desired. However, the original flavor is unmatched.
