Ingredients

  • Almond - 10.6 oz
  • Egg white - 3 pieces
  • Powdered Sugar - 8.8 oz
  • Cinnamon - 2 tablespoons
  • Orange juice concentrate - 2 tablespoons

Step by Step guide

Step 1

Whip the egg whites with a mixer until stiff peaks form. Add the powdered sugar and continue whipping until the mixture is smooth and glossy. Set aside 4 tablespoons of the meringue and refrigerate.

Step 2

Add the cinnamon, juice, and almond flour to the remaining meringue. Knead the dough by hand and roll it into a ball. If the dough is too sticky, add another tablespoon of almond flour. Refrigerate for 2 hours.

Step 3

Preheat the oven to 356°F. Roll out the dough on a floured surface to a thickness of 6–7 mm. Cut out cookies with a cookie cutter and place them on a baking sheet lined with parchment paper.

Step 4

Brush the reserved meringue on top. Bake for 10–12 minutes. Do not overbake. The cookies should remain soft inside.
