Cinnamon Sugar Babka
Ingredients
- Wheat Flour - 17.6 oz
- Dry yeast - 0.5 oz
- Milk - 7 fl oz
- Chicken Egg - 2.8 oz
- Salt - 0.3 oz
- Sugar - 2.8 oz
- Butter - 5.3 oz
- Brown Sugar - 3.5 oz
- Ground Cinnamon - 0.4 oz
- Raisins - 1.8 oz
Step by Step guide
Step 1
In the mixing bowl, add the milk and eggs, yeast, sugar, flour, and salt, and start mixing on the lowest speed.
Step 2
As soon as all the ingredients are combined, increase the mixer speed and knead for 7–8 minutes.
Step 3
Then gradually add 100 grams of cool, but not icy, butter in small pieces. Only add the next piece when the previous one has fully incorporated into the dough.
Step 4
Transfer the prepared dough to a clean bowl, cover it with plastic wrap, and place it in a warm spot for 45 minutes.
Step 5
After 45 minutes, knead the dough on a floured surface and let it rise again for 40–45 minutes.
Step 6
Then knead the dough again and let it rise in a warm place for another 20-25 minutes.
Step 7
Roll out the dough into a rectangle that is 5–7 mm thick, with a 3:4 aspect ratio.
Step 8
Spread softened butter over the dough, leaving a 1.5 cm margin from one short edge where it will be sealed.
Step 9
Mix the brown sugar with cinnamon and sprinkle it over the dough, leaving the same margin from the edge of the dough.
Step 10
Spread the raisins evenly over the dough.
Step 11
Roll the dough into a tight log and place it seam side up.
Step 12
Using a sharp knife, cut the roll from the center to the edge. Turn the cut halves with the cut side up and twist them into a spiral. Then, cut the second half of the roll in the same way and twist it into a spiral.
Step 13
Place the babka in a warm spot for 50–60 minutes.
Step 14
Place the risen babka in a preheated oven at 170–356°F for 25–30 minutes.
Step 15
Allow the finished pie to cool.
