Citrus Cake with Lime Glaze
Ingredients
- Sugar - 1.8 oz
- Butter - 6.2 oz
- Farm fresh eggs - 3 pieces
- Wheat Flour - 7.9 oz
- Baking Powder - 1 teaspoon
- Milk - 2 tablespoons
- Orange zest - 1 teaspoon
- Orange juice concentrate - 6 tablespoons
- Light Molasses - 3 tablespoons
- Lime - 1 piece
- Lime Juice - 1 tablespoon
- Water - 1 tablespoon
- Powdered Sugar - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 356°F, grease a 900 g silicone loaf pan with butter and dust it with flour.
Step 2
Cream the butter with sugar until fluffy. Gradually mix in the beaten eggs. Add the flour with baking powder one tablespoon at a time, mixing with a metal spoon. Add the milk, zest, and half of the orange juice.
Step 3
Transfer the batter to the prepared pan and smooth the surface. Bake for 1 hour. Check for doneness with a wooden stick.
Step 4
Slice the lime into half-moons. In a saucepan, dissolve the sugar in 100 ml of water. Add the lime slices to the syrup and simmer on low heat for 10 minutes. Remove the slices, cool, and pat dry with a paper towel. Heat the remaining syrup with honey and let it cool.
Step 5
Poke the cake all over with a stick and drizzle with the lime-honey syrup, then let it cool.
Step 6
Mix the lemon juice with cold water and powdered sugar, and pipe the resulting glaze in thin stripes over the cake. Arrange the lime slices on top.
