Ingredients

  • Ground Almonds - 1.8 oz
  • Honey - 1.1 oz
  • Sugar - 3.5 oz
  • Wheat Flour - 5.3 oz
  • Vegetable Oil - 2 fl oz
  • Salt - a pinch
  • Activated Baking Soda - 0 oz
  • Grated Ginger Root - 1 tablespoon
  • Meyer Lemon Juice - 3 tablespoons
  • Citrus Zest Mix - 2 tablespoons
  • Water - 5 fl oz
  • Cinnamon - 1 teaspoon
  • Ground clove - 1 teaspoon
  • Orange juice concentrate - 1 tablespoon
  • Orange zest - 1 teaspoon

Step by Step guide

Step 1

Mix the almonds, sugar, flour, baking soda, and salt. Squeeze the juice from the lemon and orange. Stir, grate the zest, and add it. Add the honey. Add the spices and ginger. Mix well.

Step 2

Gradually add the oil and water, alternating between them. Mix well.

Step 3

Grease a baking dish (18 cm) with oil, pour in the batter. Optionally, you can top it with almond petals. Bake at 356°F for 40–50 minutes.
