- Activated Baking Soda - 0.1 oz
- Whole egg - 1 piece

- Milk - 6 fl oz
- Meyer Lemon Juice - 1 fl oz
- Orange juice concentrate - 1 fl oz
- Vanillin - 0 oz
Step by Step guide
Step 1
Preheat the oven to 356°F.

Place paper liners in 12 muffin cups.
Step 3
In a large bowl, mix the flour, sugar, poppy seeds, lemon zest, orange zest, baking powder, vanillin, salt, and baking soda.

Beat the egg and yolk with melted butter. Add the milk, orange juice, and lemon juice, and whisk again.

Add the liquid ingredients to the flour mixture and gently mix until lumps are gone. The batter should remain airy.

Fill the muffin cups about two-thirds full with batter and place on the middle rack of the oven. Bake for 20–25 minutes, checking for doneness with a toothpick.

Remove the pan (or individual cups) and let the muffins cool on a rack for 5 minutes without removing them.
