Description
Sabayon can be stored in the refrigerator for no more than 1 day. In this case, serve it chilled.
Ingredients
- Oranges - 3 pieces
- Chicken Egg - 2 pieces
- Whole egg - 2 pieces
- Meyer Lemon Juice - ½ glasses
- Butter - 2 spoons
- Sugar - ¾ glasses
Step by Step guide
Step 1
Divide the segments of 3 large oranges or grapefruits, peeled of their membranes, evenly among 6 dessert cups or wide whiskey glasses.
Step 2
In a metal bowl, whisk together the eggs, egg yolks, and granulated sugar. Once the mixture is homogeneous (about 2 minutes), place the bowl over a double boiler with boiling water and continue whisking until it reaches a frothy consistency (approximately 2 minutes).
Step 3
Add one third of the fresh lemon juice to the egg mixture and whisk for 1 minute. Repeat this process with the remaining lemon juice two more times.
Step 4
After adding the lemon juice, continue to whisk while keeping the bowl over the water bath for about 7-8 minutes. When the egg mixture reaches 167°F, remove it from the heat, add the butter, and mix everything thoroughly.
Step 5
Let the zabaglione cool slightly. Serve warm, evenly distributing it into glasses with orange slices.
