- Red Grape Juice - 2 pieces
- Grapefruits - 1 piece
- Oranges - 2 pieces
- Mandarins - 2 pieces
- Gelatin - 4 teaspoons
- Water - 5 fl oz
- Nutmeg - 10 fl oz
- Sugar - 3.5 oz
Step by Step guide
Step 1
Using a sharp knife, cut the zest and white membranes from all the fruits. Carefully cut out the segments.
Step 2
Take 1 tablespoon of caramelized grapefruit zest and finely chop it.
Step 3
In a terrine mold, mix the citrus segments and the chopped caramelized zest.
Step 4
In a cup, sprinkle the gelatin and add 3 tablespoons of cold water, letting it sit for about 1 minute until the gelatin softens.
Step 5
In a small saucepan, bring the nutmeg and sugar to a boil, stirring until the sugar dissolves, and cook for 2 minutes. Remove from heat and stir in the gelatin until fully dissolved. Add the remaining water and place the bowl over ice. Quickly stir to cool and pour the mixture over the fruits. Cover with plastic wrap and refrigerate for at least 4 hours.
Step 6
Remove the terrine from the mold by holding it in hot water for a while and inverting it.
