Step by Step guide

Step 1

Prepare the cottage cheese: if the cottage cheese is grainy, it is recommended to pass it through a sieve or beat it with a fork several times to eliminate lumps. It is important to achieve a smooth texture.

In a deep bowl, mix the cottage cheese, egg, sugar, vanilla sugar, and a pinch of salt. Then gradually add the flour, starting with three tablespoons. The dough should not be too sticky or too thick. The optimal consistency is when the mixture can be easily shaped into a patty.

Dust the working surface with flour. Take a small amount of the cottage cheese mixture, shape it into a small patty, and coat it in flour. If the dough is slightly sticky, you can add a little more flour, but in moderation, to avoid an overly floury taste.
