Classic cheesecake bars
Ingredients
- Shortbread Cookies - 4.5 oz
- Sugar - 1 oz
- Salt - a pinch
- Ground Cinnamon - 0.1 teaspoons
- Butter - 2.5 oz
- Granulated sugar - 7.1 oz
- Semi-soft cream cheese - 17.6 oz
- Farm fresh eggs - 3 pieces
- 10% cream - 2.1 oz
- Vanilla Pod - 1 piece
Step by Step guide
Step 1
Preheat the oven to 374°F. Crush the cookies in a blender until fine crumbs form. Cut the vanilla pod in half and scrape out the tiny black vanilla seeds with a knife. Keep the seeds and place the pod in the sugar container.
Step 2
For the crust, combine the crushed cookies, granulated sugar, salt, and cinnamon in a bowl. Mix well, then pour the melted butter into the dry mixture and knead into a crumbly dough with your hands. Transfer the dough to a greased 8x8 cm baking pan and evenly spread it across the bottom. Press the crumbs firmly to the bottom of the pan and refrigerate for 30 minutes. After that, remove and bake in the oven for 8 minutes. Take it out and let it cool.
Step 3
For the filling, combine the warm cream cheese and granulated sugar in a bowl. Add the cream, vanilla seeds, and eggs one at a time, mixing thoroughly until smooth. Pour the resulting cream over the cooled crust and bake in the preheated oven at 320°F for 35–40 minutes. Turn off the oven and leave the cheesecake to cool inside for about 5 hours. This will prevent the surface from cracking due to a sudden temperature change when transferring it from the oven to the refrigerator. It’s quite convenient; just remember not to use the oven during this time and not to forget that something is inside to avoid accidentally burning the dessert.
Step 4
Remove the cheesecake and transfer it to the refrigerator for at least 2 hours before serving. After that, take it out, cut it into bars of any reasonable size, wrap each in plastic wrap, store in the refrigerator, and take it with you on the go.
