Classic chocolate truffles
Ingredients
- Heavy cream - 1¼ cups
- 70% Dark Chocolate - 17.6 oz
- Cocoa Powder - to taste
Step by Step guide
Step 1
Pour the cream into a saucepan and bring to a boil. Remove from heat and let cool for 10 minutes.
Step 2
Meanwhile, melt 200 grams of chocolate in a double boiler. Remove from heat and add another 60 grams. Mix well and add the cream. Refrigerate for about 3 hours until set.
Step 3
Line a large plate with parchment paper. Take 2 teaspoons of the chocolate mixture and roll into balls. Place on the prepared plate. Refrigerate for 1 hour.
Step 4
Line another plate with parchment paper. Melt the remaining chocolate in a double boiler, remove from heat, and let cool slightly.
Step 5
Take a small amount of warm chocolate in your hands, then take 1 truffle and gently roll it in your hands. Place on the plate. Repeat with the remaining truffles. Optionally, roll in cocoa powder before placing on the baking sheet. Chill for 1 hour.
