Ingredients
- Whole egg - 3.9 oz
- Sugar - 11.5 oz
- Water - 2 fl oz
- 10% cream - 17 fl oz
- Mascarpone Cheese Unagrande - 17.6 oz
- Savoiardi Cookies - 6.8 oz
- Freshly brewed green tea - 6 fl oz
- Rum - 1 fl oz
- Gelatin - 0.7 oz
- Cocoa Powder - to taste
- Fresh Berries - to taste
Step by Step guide
Step 1
Beat the egg yolks until they turn pale.
Step 2
Prepare a sugar syrup using a ratio of 275 grams of sugar to 70 grams of water.
Step 3
Whip the cream until thick.
Step 4
Slowly pour the syrup into the whisking egg yolks in a thin stream. Continue to whisk for a few more seconds.
Step 5
Add the mascarpone and whip everything until smooth.
Step 6
Add the gelatin that has been soaked in water beforehand. Mix the gelatin with the mascarpone mixture.
Step 7
Whip the cold cream until soft peaks form.
Step 8
Combine the mixture with the cream and gently fold everything together with a spatula.
Step 9
Take a tiramisu mold. Brew an Americano, add 50 grams of sugar and rum, and stir well.
Step 10
Start assembling the dessert. Spread 1/4 of the cream on the bottom. Dip the cookies in coffee and place them on the cream. Arrange the cookies in a tight layer. Cover the cookies with 1/2 of the cream. Add another layer of coffee-soaked cookies on top, not tightly packed, so the cookies can stand apart from each other. Place the second layer of cookies perpendicular to the first. Use the remaining cream to cover.

Garnish with cocoa powder or berries.
Step 12
Refrigerate for 3–4 hours.
