- Dried Apricots - 3.5 oz
- Cinnamon - 1½ teaspoons
- Honey - 1 tablespoon
- Meyer Lemon Juice - 1 tablespoon
- Salt - a pinch
- Desiccated coconut - to taste
Step by Step guide

In a blender or food processor, first grind the almonds into crumbs, then add the shredded coconut and blend again.
Step 2
Finely chop the dried apricots with a knife and add them to the blender with the nuts.
Step 3
Add the cinnamon, lemon juice, and salt. Blend everything together once more.
Step 4
Add the honey to the mixture and stir with a fork.
Step 5
Roll the mixture into balls and coat each one in shredded coconut.
