  • Bananas - 1 piece
  • Eggs - 2 pieces
  • Coconut flour - 3 tablespoons
  • Baking Powder - ½ teaspoon
  • Cinnamon - ½ teaspoon
  • Vanilla Sugar - ½ teaspoon
  • Honey - to taste
  • Fruits - to taste
  • Fresh Berries - to taste

Step by Step guide

Step 1

Mash the banana (a large ripe one) into a puree (using an immersion blender is easiest, but you can also just mash it with a fork).

Step 2

Lightly beat the eggs and add them to the banana.

Step 3

Add the coconut flour, baking powder, cinnamon, and vanilla sugar.

Step 4

To enhance the coconut flavor, sweeten with coconut sugar (1 teaspoon).

Step 5

Cook in a skillet like regular pancakes.

Step 6

Serve with honey and any fruits or berries. You can sprinkle with shredded coconut.
